Quinoa is my new-found
favorite rice substitute. If you are Chinese, you know how hard it is to give
up rice. Ever since quinoa was introduced into my life, I can’t get enough of
it.
This is a fun and flavorful recipe to share with your family and friends.
Enjoy!
1 tablespoon extra virgin olive oil
½ cup yellow onion, finely chopped
1 cup baby spinach
2 hot link sausage
3 cloves garlic, minced
1 lb lean ground turkey
½ teaspoon salt
¼ teaspoon ground black pepper
2 large bell peppers,
washed
2 cup cooked quinoa
Directions:
1.
Heat a large
skillet over medium-high heat and add 1 Tablespoon olive oil. Add garlic and
ground turkey, salt, pepper and brown several minutes until cooked through,
then add in hot links and mix well for another 5 minuets.
2.
Combine spinach,
cooked quinoa and meat together.
3.
Cut the
peppers and remove the seeds.
4.
Place in a
baking dish. Spoon the meat mixture into each pepper. Bake at 350F for 25-30
minutes.
