Kimchi Fried Rice

Kimchi Fried Rice…these 3 words has been on my mind for quite some time. I was extremely eager to make this dish, and Chris was impatient to eat, few reasons: 1. we love rice; but we try not to eat rice much (now you know why we were “extremely eager”). 2.  we love spicy; we try to make everything with hot sauce possible. 

I do have to admit, Korean style fried rice is much tastier because Kimchi brings so much more flavor to rice. This is definitely a comfortable food dish I will make over and over.

I’m surprised I just discovered this dish, Kimchi Fried Rice…where have you been all my life!!!


Ingredients:
*about 3-4 servings

3 tablespoons olive oil
4 cloves garlic, chopped
2 stalks green onion, chopped
5 cups overnight rice
1 cup kimchi, cut into small pieces (depending on spiciness)
2 tablespoon kimchi juice
1 teaspoon sesame oil
1 tablespoon light soy sauce
Optional:
1 fried egg per person
Turkey Spam or any types of meat you like with your fried rice.

Directions:
1.       Heat 1/2 teaspoon oil in a sauté pan over medium heat; cook the egg sunny side up. Dish out and set aside.
2.      Add in the remaining oil into the sauté pan. Sauté spam first for few minutes then add in garlic and kimchi for a quick stir add in the rice, mixes well. Lastly adding soy sauce, sesame oil and scallion, blend well with the rice.
3.      Serve immediately with the fried egg over rice.
