Lemon Green Beans

If you are looking for a quick, healthy and irresistible side dish, I have THE dish for you – Lemon Green Bean. It’s an all around dish goes with any types of meats, and only takes minutes to put together. This fresh, crispy and tangy dish tastes like summer!


Ingredients:
1lb green beans
1 lemon juice
3 tablespoons olive oil
Salt and pepper to taste

Directions:
1.    Trim the ends off the green beans.
2.   Blanch green beans in a large stockpot of salted boiling water until tender crisp, about 3-5 minutes. Drain and shock in a bowl of ice water to stop from cooking. (Makes the color of the green bean stay vibrant)
3.   Place cooked green bean in a large bowl, toss with oil, lemon juice and season with salt and pepper. Serve immediately.
4.   **Optional** Sprinkle some sliced almonds on top.
