One of my favorite Italian dishes to cook is Chicken Cacciatore. First I absolutely love chicken, second it’s pretty much a stew, third one pot family meal, can’t get any better than that. With this dish, any types of chicken meat works, but I prefer thigh because dark meat always taste juicier and flavorful.
Chicken Cacciatore is the perfect family meal dish. With the family busy schedules, you can cook it the night before and warm it up the next day.
Ingredients:
6 skinless chicken thighs, rise and pat dry
3 tablespoons olive oil
1 red bell pepper, chopped
2 cups mushrooms, chopped
1 onion, chopped
3 cloves garlic, finely chopped
1 28-ounce can crushed tomatoes
1/2 cup white wine
1 cup fat free chicken broth
1 teaspoon Italian Seasoning
Salt and freshly ground black pepper
*Optional* a pinch of red crushed peppers, if you want a little kick.
Directions:
1. Season chicken with salt, pepper and Italian Seasoning.
2. In a large heavy sauté pan, heat oil over medium-high heat, add chicken to pan, do not crowd the pan, cook until one side is nicely browned about 10 minutes, turn do the same on the other side. Then remove set aside.
3. In the same pan, add onion, garlic, pepper sauté over medium heat until the onion and pepper is tender about 4 minutes, then add in mushrooms and cook about 2 minutes, season with salt and pepper. Add the crushed tomatoes and wine stir to combine.
4. Return chicken to the pan; let it simmer over low heat for 30 minutes. And ready to serve.
