White Corn Salsa

For the corn lovers out there, here is another corn dish to add to your collection. This is also a refreshing summer BBQ dish to enjoy. BBQ dishes should be quick, simple and fun.

Ingredients:
2 cups white corn (frozen or fresh)
1 Poblano pepper
1 Jalapeño pepper
1/2 medium red onion, diced
2 tablespoons fresh cilantro, chopped
1/2 lime, juiced
1 tablespoon olive oil
Salt to taste

Directions:
1.       Slice both Poblano and Jalapeño pepper in half, brush olive oil on skin and place skin down on grill over medium-high heat for about 5 minutes. Set aside to cool. Discard stem and seeds, and then dice.
2.      In a bowl, toss together corn, onion, Poblano, Jalapeno, cilantro, lime juice, olive oil and salt. And serve immediately.
