Summer time Guacamole dip

Summer weather has finally arrived; this means lots and lots of BBQ. My favorite part of BBQ are the dips and salsas, one must have dip is the infamous guacamole. There are hundreds of versions out there; this is Shanghai Lumpia’s version.

Chris wanted to do something different with the photo presentation by capturing step by step actions, it was a lot of work but fun, please enjoy!

Ingredients:
2 avocados, peeled, pitted, and mashed
1 lime
1/2 medium red onion, diced
1 Roma tomato, diced
2 tablespoons fresh cilantro, chopped
1/3 Jalapeño pepper, diced
Salt for taste

Directions:
1.       Wash diced red onion with salt and water; this eliminates some spiciness from the fresh onion.
2.      Combine together onion, tomato, cilantro, Jalapeño and 1/2 lime juice.
3.      Mash together avocados, the other 1/2 lime juice, and salt for taste. Then mix everything together.
4.      Refrigerate for about 1 hour before serving.
