*Revised* Buttermilk Banana Bread

We made about 5 banana breads last week; I have the ingredients memorized after the second one. Better thing about it, is that I revised the recipe a little bit; reduced on the sugar and cooking time. Taste just like my original recipe.

Ingredients:
1 ¾ cups all-purpose flour
¾ cups white sugar
1 teaspoon baking soda
½ teaspoon salt
1 cup mashed bananas
2 eggs
1/3 cup buttermilk
½ cup melted butter (1 stick)

Directions:
1.        Preheat oven to 325 degrees F (165 degrees C). Grease one 9X5 inch loaf pan with non-stick spray or butter.
2.       Cream the eggs, buttermilk and bananas, then add melted butter until smooth.
3.       Stir together the sugar, flour, baking soda and salt. Add to banana mixture, mix well.
4.      Pour into pan and bake 55 minutes or until a toothpick inserted into the center comes out clean. Remove from pan and let cool before serving.






*Optional*
Add ½ cup of chopped walnuts to the banana mixture, then its banana bread with walnuts.
