Turkey Meatballs and Garlic Sautéed Spinach


Chris is on a healthy high protein diet for the past a month and a half, because he is leaving for NYC and Miami this Friday. Therefore, he needs to look good for the Miami girls…LOL! Turkey and spinach is what he requested for dinner. I came across Turkey Meatball recipe from William-Sonoma Comfort Food (thanks for Elaine), did some minor changes to the recipe and definitely very healthy, no frying involved. 

Turkey Meatballs

Ingredients: *Makes about 16 meatballs
1 ½ lb ground turkey
2 eggs
½ yellow onion, finely chopped
½ cup chopped flat-leaf parsley
1/3 cup plain breadcrumbs
2 teaspoons salt
1 teaspoons ground black pepper
1 teaspoons white pepper
½ tablespoon olive oil

Tomato Sauce:
1 tablespoon olive oil
3 cloves garlic, chopped
½ yellow onion, sliced
½ lb mushrooms, sliced
1 can 28oz crushed tomatoes
½ tablespoon Worchester sauce

Directions:

Meatballs
1.       Preheat oven to 400 degrees F.
2.      Sauté finely chopped onion in oil over medium-high heat until translucent and light brown, set up and let it cool.
3.      Mix eggs, parsley, bread crumbs, sautéed onions, salt and peppers with turkey in a large bowl. Shape the turkey mixture into 1 inch diameter meatballs.
4.      Place meatballs on baking sheet; bake 10 minutes on each side.

Tomato Sauce
5.      In a large casserole pot, heat oil over medium-high heat. Add onion, garlic and mushrooms sauté until soft and translucent, season with salt and pepper.
6.      Add can tomatoes and meatballs and simmer covered on low heat for 30 minutes. Add Worchester sauce for final touch and rest to serve.


Garlic Sautéed Spinach

Ingredients:
1 lb baby spinach
1 tablespoon olive oil
3 cloves garlic, chopped
Salt to taste

Directions:
1.       Heat oil in a large pan over medium-high heat. Add garlic and sauté for 1 minute.
2.      Add spinach to the pan, sauté about 2 minutes. Make sure most are coat with oil, and then add salt to taste. Sauté for 1 minute until all are wilted. Remove from  heat, serve immediately.
