Spicy Korean Soft Tofu Stew (Soon Dubu Chigae)

This is my easy, lazy and nontraditional version of Korean Tofu Stew. You can purchase all the ingredients at a Korean supermarket.

Ingredients: (Serves about 3-4)
½ lb marinated thin slide beef (shabu-shabu style)
1 block silken tofu, cut into bite size cubes
1 bundle string mushrooms, cut off the end
3 tablespoons Korean Hot Pepper Power *depending on spiciness
2 packets Tofu Broth Seasoning (1 bag contains 3 packets)
½ tablespoon sesame oil
3 cups of water
2 stalks green onion
Salt to taste


Directions:
1.       Stir-fry the beef in a soup pot until brown, add in water bring it to boil.
2.      Add Tofu Broth Seasoning, mushrooms, and tofu, bring to boil.
3.      Add Hot Pepper Power and sesame oil; let it simmer for about 5 minutes.
4.      Add green onion and ready to serve.


There are many different versions of this dish; seafood, pork, chicken and mushrooms. You can also crack an egg into the stew like how they serve it in the Korean restaurant. Don’t forget to serve the stew with rice.
