Katsudon “The Real Deal” (カツ丼)

Chris was craving for the Katsudon from Miyabitei located inside of Mitsuwa Marketplace, he asked me to make it for dinner. This is one of his new favorite dishes, because it comes with white rice, fried pork, and eggs.  This meal is very much easy to make and very traditional.

If you are not a fan of pork; definitely substitute it with chicken or beef.

Ingredients: (serves 2)

Tonkastu
2 thick slice boneless pork chop
2 tablespoons white flour
1 egg
1 cup breadcrumbs or Panko
Salt, black & white pepper to taste
Frying oil

Sauce
½ cup water
½ teaspoon granulated Dashi (Japanese soup stock)
2 tablespoon light soy sauce
2 tablespoon mirin (sweet rice cooking wine)
1 teaspoon sugar
½ yellow onion
2 eggs

2 cups of cooked white rice

Directions:

Tonkatsu
1.       Tenderize the pork with a meat tenderizer, lightly season with salt and peppers.
2.      Lightly coat both sides of the meat with flour, then with beaten egg; lastly coast each side of meat with Panko.
3.      Deep fry in 350 degrees hot oil for about 2 minutes or until golden brown.
4.      Cut Tonkatsu into 1 inch strips.
Sauce
5.      Slice onion, lightly beat 2 eggs.
6.      In a small pan, put water, dashi, mirin, soy sauce, sugar, and sliced onion, let it simmer on high heat.
7.      When it comes to a boil, turn high to medium. Add tonkatsu and pour the beaten egg over and around the tonkatsu.
8.      Cover and cook about 30 seconds.
9.      Ready to serve. Serve over hot rice.
