Yummy Flan

I’m not big on dessert, I don’t have a “sweet tooth” but I love to bake. If I bake it, someone will eat it.

Flan is one dessert dish I LOVE to eat. Chris’ mom calls it “custard”, so cute!

I’ve always thought flan is hard to make, boy….was I wrong. I remember the first time I made this dessert; I burned my finger super bad. Why??? Well, let me tell you, when I was melting the sugar to make caramel, no one told me CAUTION!!! DO NOT TOUCH the melted sugar, it’s EXTREMELY HOT!!!! Sooooo…..I went in with my finger to touch the sugar for a taste “AHHHHHHHH……… S*** F*$&” that’s what happened. Lessons learn DON’T EVER EVER TOUCH THE HOT MELTED SUGAR; don't say I never warned you.

Ingredients:
1 cup white sugar
3 eggs
1 can (14oz) sweetened condensed milk
1 can (12oz) low fat or fat free evaporated milk
4oz (1/2) package low fat or fat free cream cheese
1 teaspoon vanilla extract

Directions:
1.       Preheat oven to 350 degrees F (175 degrees C).
2.      Melt sugar in a small saucepan over medium-low heat, stir and shake occasionally, until liquefied and turn golden color. *Be careful sugar burns quickly. Carefully pour melted sugar into a 9 inch baking dish or 8 - 5.5 oz individual ramekin to coat the bottom. Set aside to cool.
3.      In a large bowl, beat cream cheese until smooth, add eggs one at a time. Then add in condensed and evaporated milk and vanilla extract beat together. Pour into prepared dish or dishes. Line a roasting pan with a damp kitchen towel. Place baking dish or dishes on towel, inside roasting pan. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish or dishes.
4.      Bake in the preheated oven for 45 – 60 minutes, or until the center of the flan is set. Let the flan cool, then refrigerate for at least 4 hours. To unmold, run a sharp paring knife around the inside of the mold to release the flan. Invert a plate on the mold, flip the mold over, and gently remove the mold to unmold the flan and reveal the syrupy caramel topping.
