Buttermilk Banana Bread

Well.....here goes nothing, our VERY FIRST blog posting. Hope you all enjoy! 

We just got back home from the San Jose Auto Show and visiting Ren (Chris' sis) at work…it was my first time. She’s RN in the NICU (Neonatal intensive-care unit) at Santa Carla Valley Medical Center, seeing these tiny little babies in the incubator on feeding tubes and breathing tubes make my heart melt. Huge thanks to the NICU nurses, especially to Ren for what you do every day on helping and taking care of the sick little patients, nursing them back to healthy.

Chris’ mom had requested Banana Bread, since we have some ripe bananas in the house. Instead of wasting them, why not put them in use. I found this recipe on allrecipe.com, and made some minor changes of my own.

Ingredients:
1 ¾ cups all-purpose flour
1 ½ cups white sugar
1 teaspoon baking soda
½ teaspoon salt
1 cup mashed bananas
2 eggs
1/3 cup buttermilk
½ cup melted butter (1 stick)

Directions: 
1.        Preheat oven to 325 degrees F (165 degrees C). Grease one 9X5 inch loaf pan with non-stick spray or butter.
2.       Cream the eggs, buttermilk and bananas, then add melted butter until smooth.
3.       Stir together the sugar, flour, baking soda and salt. Add to banana mixture, mix well.
4.      Pour into pan and bake 1 hour and 10 minutes or until a toothpick inserted into the center comes out clean. Remove from pan and let cool before serving.

Okay okay…I have to admit, I didn’t make this banana bread. CHRIS DID. I was busy cooking dinner; he asked me if he can help so I told him to make the banana bread. His response was “REALLY???” This was his very first time baking by himself. But I said to him, just follow the recipe step by step and you got nothing to worry about. Of course, I was right there helping him.
